Ingredients

  • 2 salmon fillets
  • 125 gr cherry tomatoes halved
  • 150 ml full cream
  • 75 gr of tzatziki
  • 1 tablespoon of olive oil
  • 1 clove of garlic finely chopped
  • salt and pepper
  • fresh parsley
  • OKONO No Nuts, No Glory granola

Instructions

  • Preheat the oven to 200°C.
  • Place salmon in a greased baking dish, add cherry tomatoes and season with salt and pepper.
  • Top the salmon with tzatziki.
  • Mix the cream and garlic and pour over the salmon. If necessary, add a handful of spinach to the cream.
  • Sprinkle the No Nuts, No Glory granola over the top.
  • Bake for 20-25 minutes until the salmon is cooked and topping is crispy.
  • Garnish with fresh parsley if desired.
