Instructions
- Preheat the oven to 200°C.
- Place salmon in a greased baking dish, add cherry tomatoes and season with salt and pepper.
- Top the salmon with tzatziki.
- Mix the cream and garlic and pour over the salmon. If necessary, add a handful of spinach to the cream.
- Sprinkle the No Nuts, No Glory granola over the top.
- Bake for 20-25 minutes until the salmon is cooked and topping is crispy.
- Garnish with fresh parsley if desired.
