Granola muffins

  • INGREDIENTS

    • OKONO granola of your choice
    • 5 eggs
    • 1 teaspoon vanilla extract
    • 3 tablespoon stevia or erythritol
    • 200g cream cheese
    • 200g almond flour
    • 1 teaspoon baking powder
    • 45g melted butter
    • 100g red currants
    • pinch of salt
  • INSTRUCTIONS

    • Mix the eggs with the sugar substitute, vanilla extract, almond flour and baking powder.
    • Then add in the cream cheese and melted butter.
    • Make sure you get a smooth mixture.
    • Now carefully add in the red fruit.
    • Divide the batter into a greased muffin baking mold.
    • Cover each muffin with OKONO granola.
    • Bake for 25 minutes in an oven at 180°C degrees.
