Granola muffins

INGREDIENTS
- OKONO granola of your choice
- 5 eggs
- 1 teaspoon vanilla extract
- 3 tablespoon stevia or erythritol
- 200g cream cheese
- 200g almond flour
- 1 teaspoon baking powder
- 45g melted butter
- 100g red currants
- pinch of salt

INSTRUCTIONS
- Mix the eggs with the sugar substitute, vanilla extract, almond flour and baking powder.
- Then add in the cream cheese and melted butter.
- Make sure you get a smooth mixture.
- Now carefully add in the red fruit.
- Divide the batter into a greased muffin baking mold.
- Cover each muffin with OKONO granola.
- Bake for 25 minutes in an oven at 180°C degrees.
