Carrot cake

Treat yourself with a slice of carrot cake.
  • INGREDIENTS

    • 4 eggs
    • 130g melted butter
    • 40g stevia or erythritol
    • 100g almond flour
    • 2 large carrots grated
    • 60g coconut flour
    • 1/2 teaspoon cinnamon powder
    • 1 teaspoon baking powder
    • 150g Greek yogurt
    • 140g cream cheese
    • Golden Dream granola
  • INSTRUCTIONS

    • Preheat the oven to 180°C.
    • Beat the eggs with the stevia until fluffy.
    • Add the melted butter and mix well.
    • Mix almond flour, coconut flour, cinnamon and baking powder in a separate bowl.
    • Add the flour mixture and grated carrot to the egg mixture.
    • Now gently stir in the Greek yogurt.
    • Pour the batter into a greased cake pan.
    • Bake for 45 minutes and allow to cool.
    • Use the cream cheese (once the cake has cooled) as a frosting.
    • Spread some Golden Dream granola on top.
    • Afterwards, let harden in the refrigerator.
