Carrot cake
Treat yourself with a slice of carrot cake.

INGREDIENTS
- 4 eggs
- 130g melted butter
- 40g stevia or erythritol
- 100g almond flour
- 2 large carrots grated
- 60g coconut flour
- 1/2 teaspoon cinnamon powder
- 1 teaspoon baking powder
- 150g Greek yogurt
- 140g cream cheese
- Golden Dream granola

INSTRUCTIONS
- Preheat the oven to 180°C.
- Beat the eggs with the stevia until fluffy.
- Add the melted butter and mix well.
- Mix almond flour, coconut flour, cinnamon and baking powder in a separate bowl.
- Add the flour mixture and grated carrot to the egg mixture.
- Now gently stir in the Greek yogurt.
- Pour the batter into a greased cake pan.
- Bake for 45 minutes and allow to cool.
- Use the cream cheese (once the cake has cooled) as a frosting.
- Spread some Golden Dream granola on top.
- Afterwards, let harden in the refrigerator.
