INGREDIENTS

  • 3 eggs
  • 100g Greek whole yoghurt 
  • 40g melted butter
  • 30g coconut flour
  • 30g erythritol
  • 1tl vanilla extract
  • 1tl baking powder
  • 1/2tl xanthan gum
  • 50g OKONO chocolate
  • 1tl coconut oil
  • red fruit
  • mint

INSTRUCTIONS

  1. Mix 3 eggs with 100g full Greek yoghurt and 40g melted butter.
  2. Now add 30g coconut flour, 30g erythritol, 1tl vanilla extract, 1tl baking powder and 1/2tl xanthan gum.
  3. Heat your waffle iron and bake....
  4. Melt 50g OKONO chocolate with 1 tbsp coconut oil au-bain-marie.
  5. Make a tower of your waffles: 2 waffles, a layer of red fruit and melted chocolate on top. Repeat as much (and as high ;-)) as you like. Delicious with mint!
