Brocolli soup with croutons

Enjoy the rich flavors of broccoli soup. 
  • INGREDIENTS

    • Stone Age Bread
    • 1 tablespoon ghee or coconut oil
    • 1 broccoli
    • 2 cloves garlic
    • 1 bell pepper
    • 300ml water
    • 500ml vegetable stock
    • black pepper
    • 400ml coconut milk
    • sprouts
  • INSTRUCTIONS

    • Heat ghee or coconut oil in a saucepan.
    • Sauté 2 cloves of garlic (finely chopped), 1 bell pepper (roughly chopped) and 1 broccoli (roughly chopped, including stem).
    • Add the water, vegetable stock and black pepper.
    • Bring to a boil and continue cooking on low heat for about 20 minutes.
    • Meanwhile, make Stone Age Bread according to the instructions.
    • Cut the bread into croutons.
    • Puree the soup smooth.
    • Add coconut milk to the soup.
    • Top with the croutons and sprouts.
