
Shakshuka with Stone Age Bread

INGREDIENTS
- Stone Age Bread
- 1 red bell bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 200g mushrooms
- 2 cloves garlic
- 1/2 red onion
- 1 tablespoon ghee or coconut oil
- 400g diced tomatoes
- cumin powder
- oregano
- paprika powder
- fresh parsley
- 4 eggs

INSTRUCTIONS
- Chop the peppers, mushrooms, garlic and red onion.
- Heat ghee or coconut oil in a pan.
- Add the garlic and onion. Fry them until they are soft.
- Add the bell peppers and mushrooms.
- Now add the diced tomatoes, along with the fresh parsley (finely chopped), cumin powder, oregano and paprika powder.
- Season with salt and pepper.
- Let simmer on low heat.
- Make four “holes” and break an egg into each.
- Cover the pan with a lid and cook the eggs until almost set (about 4 minutes).
- Top with parsley and some crumbled goat or feta cheese.
- Serve with Stone Age Bread.
